CERTIFICATION PROGRAMME IN CUISINE
6 to 9 months

The Cuisine course is delivered in the on-site culinary entities of Ferrières, allowing learners to relate theory to practice and apply their competencies in the school’s 4 operational restaurants.

The course combines practical classes in an educational setting with hands-on training conducted in our operational restaurants, as part of the PAP (Programme for Accelerated Professionalisation). Following the course, students can opt for an internship to expand their skills, whether in the Ferrières’ ecosystem or in an external establishment previously validated by the School.

The course is delivered in French with simultaneous interpretation in English.

CERTIFICATION PROGRAMME IN PASTRY
6 to 9 months

The course offers a training of 6 to 9 months in the on-site culinary structures of Ferrières, allowing learners to embark on an in-situ learning process in the school’s 4 operational restaurants. The course covers the fundamentals of French pastry and welcomes both International and French students. Our pastry instructors expertly equip them for advanced positions, allowing them to develop thorough knowledge in modern pastry.

CERTIFICATION PROGRAMME IN BAKING
6 months

The 6-month baking course gives new learners an excellent basis to pursue a career in Boulangerie and build a solid experience in bread and Viennoiserie baking. Learners spend 3 days focusing on applied technical knowledge and 2 days in practical sessions as part of PAP (Programme for Accelerated Professionalisation), in alternate format.
Course structure: 5 days per week (40 hours, 5 x 8 hours) totalling 900 hours of learning.
